Lemon cake with Spirulina

Add a healthy twist to your baking adventure with this delicious Spirulina Lemon Cake. This recipe combines the nutritional benefits of Spirulina with the fresh taste of lemon for a unique and tasty result.

Ingredients

  • 4 eggs
  • 250 g sugar
  • 1 sachet of vanilla sugar
  • 160 g butter
  • 50 g milk
  • 125 g semi-skimmed cottage cheese
  • Juice of half a lemon
  • 300 gr flour
  • 1 sachet of baking powder
  • 10 g spirulina

Preparation

  1. Preheat the oven to 180°C. Then grease and flour two smaller baking tins, or use baking paper to prepare the tins.
  2. Beat the eggs together with the sugar until light and fluffy. Melt the butter and carefully add it, together with the milk and cottage cheese, to the egg mixture. Squeeze the juice of half a lemon and mix it into the batter.
  3. Sift together the flour, baking powder and spirulina. Gently fold these dry ingredients into the wet batter until well combined.
  4. Divide the batter evenly between the prepared pans. Bake the cake in the preheated oven for 45 minutes. Check if the cake is done by inserting a knitting needle or skewer into the center. If it comes out clean, the cake is done. If there is still batter sticking to it, bake the cake for a few more minutes.
  5. Allow the cakes to cool in the pans for a few moments before removing them from the pans. Then allow them to cool completely on a wire rack before cutting and serving.
